The Yataka is a new Japanese variant of Fuji that was discovered in 1982 as a limb sport on a standard Fuji tree. The Yataka ripens 15 to 20 days earlier than a standard Fuji, although not all the fruit ripens at the same time. Growers must carefully harvest the trees several times to ensure each apple is picked at its peak of flavor and color.
Yatakas are very similar in appearance and flavor to standard Fujis. They are medium-large, firm, juicy and very sweet, with dense cream-colored flesh. The skin is pink to red striped over a sunny yellow background. They have an intense, aromatic flavor that is perfect for eating out of hand. Unlike the Fuji, the Yataka is not a long-keeping apple, but rather must be enjoyed soon after harvest. One bite and you'll see why these extraordinary sweet and juicy apples disappear fast!
